Ingredients:

2 medium zucchinis, sliced thin lengthwise

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 egg

1 tsp Italian seasoning

1/2 tsp garlic powder

Salt and pepper to taste

1 cup low-sugar marinara sauce

Fresh basil for garnish (optional)
Instructions:

Prep the zucchini: Slice zucchinis lengthwise using a mandolin or sharp knife, about 1/8" thick. Lay slices on paper towels, sprinkle with salt, and let sit for 15 minutes to draw out moisture. Pat dry.

Mix the filling: Combine ricotta, Parmesan, egg, Italian seasoning, garlic powder, salt, and pepper in a bowl.

Assemble the roll-ups: Spread about a tablespoon of the cheese mixture on each zucchini slice, then roll them up tightly.

Bake: Pour marinara sauce into a baking dish and nestle the zucchini roll-ups into the sauce. Top with mozzarella and bake at 375°F (190°C) for 25–30 minutes until bubbly and golden.
